SAUTEED SCALLIONS

2 Bunches of scallions, root tips and small amount of green tops removed

4 TBSP. unsalted butter

DIRECTIONS: In a heavy skillet with a tight-fitting lid, heat butter over medium-high heat until butter is foamy but not brown. Place the scallions in the pan and spoon evenly with the melted butter. Cover the pan, reduce heat to medium and cook for 2 minutes. Turn scallions over and cook an additional 2 minutes. Serves 4.
